Brodetto di pesce (fish stew) is a typical dish of P. Recanati and is not to be missed if you are . There are regional variations throughout Italian coastal cities, but the basic ingredients are the same: at least 13 types of fishes, white wine, onion, saffron and, of course, bread. I would accompany it with a Bianchello del Metauro, a milder alternative to the drier Verdicchio.
